I had to come to Waterton mid-week for work and while here I decided to try Vimy's Lounge & Grill for dinner.  I asked Thom, Vimy's manager, for his recommendations and he suggested the trout.  On the menu titled "Rocky Mountain Trout" and touted as local fare, the fish coming from the Hill Spring area, it looked very enticing.  I was in the mood for a steak but I couldn't pass on the recommendation so I asked for the trout to follow my French Onion soup. 

I'm from the West Coast and a lover of seafood but I usually stick with salmon or halibut dishes, scallops, prawns, that sort of thing.  I've only had trout a couple of times, the last time being more than a decade ago, so perhaps it was time to give it a go. 

The soup was excellent, i've always been a sucker for French Onion soup and it did not dissapoint.  The trout came next, served with vegetables and a slice of Taber corn and it was indeed delicious.   I pass on Thom's recommendation happily.  Try the trout!
